Trachanàs: A traditional Greek dish.

Trachanas is not just a meal for the Greeks. Is a link with our childhood, the images of our yiayia (grandmother) when she cooked it and the house took on this special and warm aroma.

Trachanas is a kind of semolina made from curdled milk and wheat flour which is then put to dry in the sun before reducing this dry dough into more or less thick grains. It is a very easy soup that you can prepare in the morning as a breakfast or in the evening as a light meal before sleeping. It is ideal for warming up and relaxing.

  • Preparation time: 10 minutes
  • Quantity: 2 people
  • Difficulty: easy

Ingredients

  • 1 cup of trachanas
  • 6 cups of water
  • 50 gr olive oil
  • 100 gr of feta
  • 8 slices of bacon
  • A little thyme
  • Red pepper (boukovo)

Instructions

In a saucepan, add the water, trachana, salt, olive oil and simmer for about 10 minutes until the soup thickens. It is good to stir constantly, as the hassles easily stick to the bottom of the pot. In a frying pan, put the olive oil and sauté the bacon cut into strips for 2-3 minutes. Serve the trachana with bacon, sprinkle with fresh thyme, boukovo and serve with chunks of feta and toast.
